Wednesday: Tuna, Red Onion, and Olive Pasta
1 3-oz can tuna, drained
1/4 cup pitted kalamata olives
2 tbsp chopped red onion
2 tbsp extra-virgin olive oil
2 tsp red wine vinegar
Thursday: Asian Pasta Salad
1 carrot, sliced
1/4 English cucumber, diced
1 tbsp canola oil
1 tbsp chopped roasted peanuts
2 tsp low-sodium soy sauce
1 tsp rice vinegar
Friday: Chicken and Pesto Pasta
1/2 cup shredded rotisserie chicken
1/4 cup prepared pesto
Or try this, I just made it - add as much of each ingredient as you like. Use red onion, red pepper, corn, black beans, chili powder and cumin. YUM!
